- 1 pint cherry tomatoes, halved
- 1 medium cucumber, sliced in half moons
- ¼ red onion, thinly sliced

- 1-2 tbsp lemon juice
- 1-2 tbsp extra virgin olive oil
- Pinch salt and pepper
