- Stir together the rice, coconut milk, water, and salt in a medium saucepan. Bring to a simmer over medium heat. Reduce the heat to low, cover, and cook for 20-25 minutes or until rice is cooked and the liquid is absorbed.
- Remove from the heat and let sit for 10 minutes.
- Meanwhile, cook the shrimp according to package directions.
