- 1 lb brussels sprouts, trimmed and halved
- 1 lb butternut squash, peeled and diced
- 2 tbsp avocado oil

- Preheat the oven to 425ºF.
- Spread the brussels sprouts and squash on a baking sheet and drizzle with the oil. Season with a pinch of salt and pepper and toss to coat.
- Roast for 15 minutes, then remove from the oven and add the shrimp to the pan.
- Continue baking for about 10 minutes, or until the shrimp are hot and crisp and the veggies are tender.
- Pour the warmed honey walnut sauce over the sheet pan and toss to coat everything in the sauce. Serve hot and enjoy!
