Ingredients
  • 1 lb brussels sprouts, trimmed and halved
  • 1 lb butternut squash, peeled and diced
  • 2 tbsp avocado oil
  • Generous pinch salt and pepper

Instructions
  1. Preheat the oven to 425ºF.
  2. Spread the brussels sprouts and squash on a baking sheet and drizzle with the oil. Season with a pinch of salt and pepper and toss to coat.
  3. Roast for 15 minutes, then remove from the oven and add the shrimp to the pan.
  4. Continue baking for about 10 minutes, or until the shrimp are hot and crisp and the veggies are tender.
  5. Pour the warmed honey walnut sauce over the sheet pan and toss to coat everything in the sauce. Serve hot and enjoy!
