Ingredients
  • 1 lemon, juiced
  • ¼ cup olive oil
  • ½ tbsp honey
  • ½ tbsp Dijon mustard
  • Pinch of salt and pepper
  • 1 large head romaine, thinly chopped
  • ¼ red onion, thinly sliced
  • ½ cup halved Castelvetrano olives
  • ½ cup freshly grated parmesan cheese, plus more to top
Instructions
  1. In a small mixing bowl whisk together the lemon juice, olive oil, honey, Dijon mustard, and a pinch of salt and pepper until combined. Set aside.
  2. In a large bowl add the romaine, onion, olives, and parmesan. Pour desired amount of the dressing over the salad and toss to combine.
