We’re all craving a small bite of summertime, and this Coconut Slaw is the best way to achieve it! Made with coconut milk and citrus, this recipe will take your tastebuds on a tropical vacation.

Ingredients
  • ¼ cup organic coconut milk (we used Nature’s Greatest Foods)
  • 2 tbsp mayo
  • 1 tsp toasted sesame oil
  • 2 tsp lime juice
  • 2 tsp rice vinegar
  • 2 tsp honey
  • Pinch of salt and pepper
  • 1 – 12 oz bag slaw mix
  • ½ cup chopped snap peas
  • ¼ cup sliced green onion
  • ¼ cup chopped cilantro

Instructions
  1. In a large mixing bowl whisk together the coconut milk, mayo, sesame oil, lime juice, rice vinegar, honey, and a pinch of salt and pepper.
  2. Once combined, add the slaw mix, peas, green onion, and cilantro. Toss to combine. Cover and refrigerate.
  3. Prepare the shrimp according to package directions. Serve the shrimp alongside the slaw and enjoy!
