Ingredients
  • 1 large spaghetti squash
  • Olive oil
  • 2 tbsp butter
  • ½ tbsp freshly minced garlic
  • Salt and pepper, to taste
Instructions
  1. Preheat the oven to 425°F.
  2. Slice the spaghetti squash in half lengthwise and scoop the seeds out.
  3. Brush the flesh with olive oil and place face down on a baking sheet.
  4. Bake for about 30 minutes or until a knife is inserted and the squash is tender. Remove and let cool while you prepare the garlic butter.
  5. Heat a large skillet over medium low heat. Once hot, add the butter. Once the butter is melted, add the garlic and sauté for about 2-3 minutes until fragrant.
  6. Use a fork to scoop out the cooked squash into the pan and add a generous pinch of salt and pepper. Stir, cooking for about 1 minute.
