- 1 egg, room temperature
- 1 cup extra virgin olive oil
- ½ lemon, juiced
- ½ tsp apple cider vinegar
- 2 tsp spicy brown mustard or Dijon
- 1 tbsp fresh mint
- 1 tbsp fresh basil
- 1 tbsp fresh dill
- 2 small garlic cloves, chopped
- 2 tsp capers in brine

- Add all ingredients except the capers into a wide mouth jar or measuring cup.
- Use an immersion blender on high speed, starting at the bottom of the glass and slowly moving the way up.
- Once everything has emulsified, add the capers and blend quickly again.
- Serve as desired and enjoy!
