Ingredients
  • 1 can white beans or chickpeas
  • 3 Persian cucumbers, sliced
  • ½ small red onion, finely diced
  • 2 tbsp freshly minced dill
  • 1 large lemon, juiced
  • 2 tbsp olive oil
  • 2 tsp honey
  • Salt and pepper, to taste
Instructions
  1. Add the beans, cucumber, red onion, dill, lemon juice, olive oil, honey, and a generous pinch of salt and pepper to a large mixing bowl. Mix until well combined, taste and add more salt and pepper if needed.
  2. Cover and refrigerate for at least an hour before serving.
