Embark on your “Taste the rainbow” journey with this one pan meal. The vegetables are fresh, crisp and are the ideal partner for our crunchy Sweet & Spicy Shrimp.

Ingredients
  • 1 red bell pepper, sliced
  • 1 large carrot, sliced into ¼” rounds
  • 1 cup orange cherry tomatoes
  • 2 small yellow squash, cut into half moons
  • 1 bunch asparagus, cut into thirds
  • 2 cups purple baby potatoes, quartered
  • ½ red onion, sliced
  • Avocado oil
  • Salt and pepper
  • Social Kitchens Sweet & Spicy Shrimp
Instructions
  1. Preheat the oven to 425ºF.
  2. Place the veggies onto the sheet pan in order of the ingredients listed to make a “rainbow”. You can also mix the veggies up if you prefer.
  3. Drizzle 1-2 tablespoons of oil over the veggies and lightly toss. Sprinkle with a generous pinch of salt and pepper.
  4. Roast in the oven for 20-25 minutes or until all of the veggies are tender.
  5. Serve alongside Social Kitchens Sweet & Spicy Shrimp and enjoy!
