- 1 red bell pepper, sliced

- 2 small yellow squash, cut into half moons
- 1 bunch asparagus, cut into thirds
- 2 cups purple baby potatoes, quartered
- ½ red onion, sliced

- Preheat the oven to 425ºF.
- Place the veggies onto the sheet pan in order of the ingredients listed to make a “rainbow”. You can also mix the veggies up if you prefer.
- Drizzle 1-2 tablespoons of oil over the veggies and lightly toss. Sprinkle with a generous pinch of salt and pepper.
- Roast in the oven for 20-25 minutes or until all of the veggies are tender.
