- Preheat the oven to 425ºF.
- Drizzle a little olive oil over a baking sheet and use a brush to spread all over.
- Place the squash onto the baking sheet and brush the top with a little more oil.
- Roast for 10 minutes, then remove from the oven. Mix together the maple and Dijon mustard and use a basting brush to brush all over the tops of the squash. Place back into the oven for another 5-10 minutes until tender and golden brown.
