  • 2 scallions, sliced
  • 2 tbsp salted butter
  • 1 tbsp all-purpose flour
  • 1 cup whole milk
  • Salt and pepper
  • 16 oz bag frozen peas, thawed
Instructions
  1. Heat a large skillet over medium heat. Once hot, add the olive oil. Add the scallions and sauté for 2 minutes.
  2. Add the butter to the pan. Once the butter is melted, whisk in the flour and cook for 1-2 minutes, stirring frequently.
  3. Whisk in the milk and continue whisking as it thickens, about 3-4 minutes. The mixture should coat the back of a spoon. Stir in a pinch of salt and pepper.
  4. Stir in the peas until completely combined and allow the peas to heat in the pan, about 2-3 minutes.
