- Heat a large skillet or wok over medium high heat and add the oil. Once heated, add the onion and bell pepper and season with a pinch of salt and pepper. Saute, stirring occasionally, until stir fried and tender, about 7-10 minutes.
- Meanwhile, prepare the shrimp according to package directions.
- Stir in the peas and carrots and rice. Heat the rice, stir frying to get crispy bits of rice, for about 5 minutes.
- Stir in the soy sauce, lime juice, and sesame oil.
- Push the rice to the side and pour the whisked eggs into the other side of the skillet and reduce the heat to medium. Cook, stirring to scramble the eggs, until set, about 3 minutes.
- Stir everything together to combine. Taste and add more soy sauce if desired.
- Serve hot topped with chopped green onion and the Sweet & Spicy Shrimp!
