Ingredients

Noodles

  • 2 oz vermicelli noodles
  • 1 cup shredded green leaf lettuce
  • 1 carrot, peeled into ribbons
  • ½-1 persian cucumber, sliced
  • Crushed peanuts
  • Fresh cilantro
  • Fresh basil
  • Lime wedges, to serve

Sauce

  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp chili garlic sauce
  • 1 large clove garlic, grated
Instructions
  1. Prepare the shrimp according to package directions. Prepare the noodles according to package directions, then rinse with cold water.
  2. In a small bowl, whisk together the ingredients for the sauce.
  3. Assemble two bowls with a base of vermicelli noodles and lettuce. Top with the carrot, cucumber, peanuts, cilantro, basil, and shrimp.
  4. Serve with the lime wedges and sauce to drizzle on top and enjoy!
