- Preheat the oven to 425ºF and line a large baking sheet with parchment paper if needed.
- Spread the chopped cabbage and leek onto the pan. Drizzle with the olive oil and a pinch of salt and pepper. Toss until completely coated.
- Roast for 10 minutes, then remove from the oven. Place the frozen shrimp onto the pan with the cabbage and place back into the oven for another 12 minutes or until the shrimp is golden and crispy.
