Cool, crunchy, and creamy – this cucumber radish salad is the perfect way to veg out in style 😎🥒 Pair it with our Sweet & Spicy Shrimp for an extra burst of flavor! Here’s how to make it 👇
Ingredients:
- 3 tbsp unsweetened Greek yogurt
- ½ tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp red wine vinegar
- 1 tsp honey
- Pinch of salt and pepper
- 2 Persian cucumbers, thinly sliced
- 6 radishes, thinly sliced
- 1 tbsp freshly minced dill
- 1 tbsp sliced green onion
Directions:
1. In a mixing bowl whisk together the yogurt, olive oil, lemon juice, vinegar, honey, and a generous pinch of salt and pepper. Taste and add more salt if needed.
2. In a large mixing bowl add the sliced cucumber + radish. Add the dressing and toss to combine.
3. Pour onto a serving platter and top with the minced dill and sliced green onion.
