Vegetables that resemble dessert? Say LESS, we’ll take twenty please! 😜 These Maple Roasted Carrots are easy to make and a real crowd pleaser 👏 

Ingredients:
- 6 large carrots, sliced into ¼” rounds
- 2 tbsp pure maple syrup
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp pepper
- ½ tsp garlic powder
- ½ tsp onion powder

Directions: 
1. Preheat the oven to 425 degrees Fahrenheit.
2. In a small mixing bowl, whisk together all of the ingredients except the carrots until combined.
3. Add the carrots to a baking dish and drizzle with the maple mixture. Toss until all of the carrots are coated.
4. Bake for about 25-30 minutes, tossing the carrots every 10 minutes until tender and ready to serve. Enjoy!

What you’ll need:
- 5 Persian cucumbers, thinly sliced
- 2 tbsp creamy peanut butter
- 1 tbsp rice wine vinegar
- 1 tsp toasted sesame oil
- 2 tsp chili crisp
- 1 tbsp coconut aminos
- 2 tsp honey
- Pinch of salt and pepper

Directions:
1. In a large bowl, whisk together all of the ingredients except the cucumber until combined.
2. Toss the cucumbers with the sauce. Taste and add more salt if needed.
3. Cover and refrigerate for at least 30 minutes before serving.
4. Toss again before serving and enjoy!
